Grilled Steak with Red Wine Sauce

 
I’ve made this wine sauce many times over the years and it is wonderful. I’ve used Zinfandel, and Shiraz/Cabernet blend for the wine. Make sure you give it the right amount of time to reduce adequately.  Don’t rush it- it will pay off!


Serve with: Baby Greens, Roasted Pear, Caramelized Onions, Toasted Walnuts and Goat Cheese Salad
and Crispy Skillet-Roasted Potatoes

The Recipe:
2 teaspoons kosher salt
Rib-Eye, T-Bone, Sirloin or London Broil Steak
1 tablespoon vegetable oil
1 teaspoon ground black pepper

Sprinkle both sides of steak evenly with salt; wrap tightly with plastic wrap and refrigerate for at least 3 hours or up to 24 hours.
Heat grill until very hot.
Unwrap steak; brush both sides with oil and sprinkle evenly with pepper.  Place steak on the hottest part of the grill and grill until desired doneness.  If cooking a London broil transfer to a cutting board and let it sit for 5-10 minutes under a foil cover then slice.

Red Wine Sauce:
1 ½ cups red wine (Zinfandel or Shiraz)
1 can (13 ⅔oz) beef broth
2 tsp tomato paste
3 Tbsp water
2 tsp arrowroot
Salt and Pepper to taste

Bring the wine to a boil in a small saucepan.  Boil until the wine is reduced to ½ cup.  Add broth and tomato paste; boil 10 minutes or until reduced to 1 ½  cups.  In small cup mix the water and the arrowroot; stir into the wine mixture.  Heat to boiling.  Stir in salt and pepper.  Add any juices from the meat if you can.
