Stuffed Mushrooms

2- 10 oz. packages of medium sized mushrooms
1 cup flavored breadcrumbs
4 garlic cloves, finely chopped
4 tbsp. chopped parsley
1/4 cup extra virgin olive oil
Salt and pepper to taste

Remove stems from mushrooms. Place mushroom stems into food processor and finely chop. In medium sized bowl, add chopped mushroom stems, garlic, parsley, breadcrumbs, and oil. Mix together until moist (you may need to add a little more oil). Stuff small amount of filling into mushroom caps. Place on cookie sheet and bake at 350 degrees for 10-15 minutes.

Serve immediately.
